A vegetable oil made from canola, a specific type of rapeseed created by Dr. Keith Downey and Dr. Baldur R. Stefansson at the University of Manitoba. It is neutral in taste.
This cooking oil has been produced since the 1970s, but it wasn’t introduced to the U.S. until 1985.
Canada remains the largest producer of canola oil, having exported 15 million tons by 2013.
The word “canola” is a mixture of the words “Canada” and “oil.”
