While there is no one recorded way the corn was introduced to Africa, the assumption is that European explorers and traders, possibly Portuguese, introduced the crop from the Americas. Corn became an adopted staple to West African cuisine in the 16th century.
Corn is the world’s third most important cereal crop. Corn is referred to as maize in many other countries outside of the U.S.
