Ingredients: Salt
The mineral compound of sodium chloride. There are different kinds of salt, including rock salt and sea salt. Rock salt is found underground and is mined. Sea salt is left over from evaporated salt water.
Humans have used salt since prehistoric times, and salt sources can be found in every region that sustains human life.
While salt is available on every continent, it isn’t necessarily plentiful in some areas. In Europe, Africa, and Asia, this led to “salt roads,” trade routes created specifically for salt trading.
Salt is essential for the human body and is healthful in moderation.

Black Eyed Peas
Black Eyed Peas are a very traditional southern dish. Growing up, my mother always made sure we had black eyed peas, cornbread, collard greens, and stewed tomatoes for new years. Black eyed peas represent good luck and prosperity. As a child I hated black eyed peas and didn’t fully appreciate them until I became a chef. Now, as an adult and a chef, I continue this tradition and hope to one day pass it down to my children.
