Family Story

My family has been in New Mexico for many generations. We have traced some of our ancestors back to Spain as early as the 1500's. Biscochitos are a traditional New Mexican cookie. This recipe has been in my family for at least 5 generations if not longer. My mom and I always make these cookies around Christmas time. These cookies are like a cross between a sugar cookie and shortbread.

Cream lard, gradually add sugar then eggs. Mix in anise. Sift dry ingredients, add to mixture. Add liquid, mix well. The dough should not be too sticky, add extra flour as needed. Divide dough and roll out. Cut and dip cookies in cinnamon sugar. Bake in a 375 degree oven for 10–12 minutes or until edges begin to brown.
