Family Story

Growing up on our farm in Texas, Mother made this every summer with fresh picked ripe tomatoes and herbs. The amounts of ingredients varied, depending on how many tomatoes were ripe, what herbs she grew that year, and what she had on hand. The dish has become modestly famous among our friends.

Cover the bottom of a greased baking dish with biscuit dough (either homemade or canned biscuits). Mix mayonnaise and grated parmesan cheese. Layer on top of biscuit dough: sliced tomatoes, mayo/parmesan mix, chopped fresh herbs. Repeat layers, ending with sliced tomatoes and additional grated parmesan cheese. Bake at 350 for 30-45 minutes until biscuit dough is done.
