Family Story

My great aunt's, Lizzie and Nanny sent this cake for Christmas via USPostal service. They added pink ribbons because the name sake of the cake, Dolly Varden, from a Dickens novel, wore gay ribbons. Because it came through the mail, it was dry (and hence safe) and could be served with a custard sauce or egg nog. The pictured version is from a recent 80ieth birthday of a family member.

1 Step

Makes four layers, two with fruit and two with nuts. For raisin layer cream butter and sugar, add yolks, raisins, citron, flour and Brandy. Put in 2 greased layer cake pans and bake aofft 350 for 30 minutes.

2 Step

For nut layer, cream together sugar and butter. Add flour and stiff egg whites, and mix with chopped nuts. Place in 2 greased layer pans and bake for 30 minutes in 350 oven.

3 Step

For filling and Frosting, mix boiling water, sugar and salt. Add to egg whites, continue beating in double boiler over boiling water for about 6 minutes. Remove from heat and beat for about two minutes, adding flavor and food color to produce pink.
