Family Story

This Irish Soda Bread family recipe was handed down with quaint instructions that included "large handfuls" of this and "pinches” or “fistfuls" of that. I took it upon myself to develop a more typical recipe that included measurements such as “cups” and “teaspoons”. I ended up passing on this recipe to family members of my generation who preferred my more familiar approach.

Preheat oven to 375 Add all the dry ingredients in a large bowl and stir well Add buttermilk at one time Using hands, mix until all combined Add currants Split into 2 loaves and form Put loaves onto baking sheet (I use parchment paper) Using sharp knife, cut a cross into the top of each loaf Sprinkle flour onto each loaf Let loaves rest 10 minutes Bake 50 minutes and if getting too dark, put aluminum foil over loaves Let sit about 15 minutes before cutting
