Through the times of staying home due to COVID, more than ever we cook with what we have and make due with leftovers. My two kids may not always love butternut squash, but we created a fun lunch with leftovers. Giving the kids creative add-ins like cheese crisps and toasted nuts made it more fun for them to customize to their tastes. Cooking in the fly is what we are all about these days.

Put onions and squash into a pot and sauté for a few minutes with garlic salt and curry. Once heated, add a cup of water, milk, chicken stock or curry. Mix until combined and then blend with immersion blender until smooth. Now add more curry and water/stock to taste. Bring to a simmer. Garnish with green onion, pepper, roasted almonds and/or cheese crisps.
