My great grandmother was born in the land of eternal spring; Guatemala. Even today I can still remember the way her prune chicken dish would fill the air as to say dinner is ready. She was a hardworking woman who always made sure my sister and I had full bellies and smiles on our faces. One of her most famous dishes is La Torta De Maiz. She would blend all the ingredients together and bake it to a perfect golden brown. Her corn cake was so moist inside it would melt in your mouth. Her recipe has been passed down from generations and it is still a big hit at any gathering. My great grandmother loved to explore new flavors in the kitchen and made sure we ate every last bite. She was one of a kind and will always live in our hearts.
Put all the ingredients in a blender and mix it until well blended (without raisins).
Scrape the blender and mix again
Pour mixture in a rectangular Pyrex already greased and floured
Add the raisins (optional)
Heat the oven to 350 degrees and bake for 50 minutes
You can decorate with confectioners/powdered sugar and cut in small pieces
